Olly's been a chef since the early nineties and after working in the UK, Italy and France he moved to Brighton in 2002. Here he became involved in local community cookery work as a Community chef.  In this role he worked to develop peoples cookery skills and confidence in choosing a heathy diet as well as champion local produce through cookery demonstrations around the county. This included the local fish festivals using lesser known species and educating the public about the incredible bounty of seafood the Sussex coast has to offer.
 
Olly's Fish Shack was started with the idea that he could use his passion for sustainability and awesome cooking to bring exceptionally high quality seafood to people at an affordable price. 10 years on and Olly's Fish Shack has gained a loyal following, great reviews and even cooked a fish and chip supper Rick Stein and 100 of his guests!
